Potato and Kielbasa Skillet

I love one-skillet meals! They are fast, easy and full of flavor. How can you get any better than sausage and potatoes? Add some spinach and bacon and there won’t be many leftovers! This is a wonderful meal that I know you are going to love.

Potato and Kielbasa Skillet

6 oz. bacon, diced
2 lbs potatoes, sliced
14 oz. Kielbasa
1 medium onion, diced
2 T brown sugar
2 T apple cider vinegar
1 T Dijon mustard
1 1/2 tsp fresh thyme, minced
1/4 tsp. black pepper
6 oz. frozen spinach, thawed and drained

On your camp stove heat a 12″ cast iron skillet. Fry bacon over medium heat until crisp, remove to a separate bowl. Meanwhile, Slice potatoes into 1/4″ rounds and then cut in half. Add potatoes to the bacon grease and fry, stirring often, until they start to brown and are tender crisp. Spoon them into a bowl and set aside. Add sliced kielbasa to your hot pan and fry until browned. In a small dish, combine the sugar, vinegar, mustard and spices, mix well to combine.

Add potatoes back with the sausage and add the spinach, stir well. Add liquids and simmer for 3 – 4 minutes. top with bacon and serve.
