Mississippi Corn Bread

Every once in a while you find a dish that you can prepare over and over and it never gets old. That is Mississippi Corn Bread! It is good for breakfast, lunch or dinner. My son, Reese, just made it for a neighborhood block party and they loved it. The combination of sausage, pepper jack and corn is hard to beat.
Ingredients
  • 1 lb. Bulk sausage, cooked (I like "hot")
  • 2 boxes Jiffy corn bread mix.
  • 1 can Cream-style corn
  • 12 oz. Sour cream
  • ½ C. Vegetable oil
  • 3 Eggs, slightly beaten
  • 4 - 5 Green onions, chopped
  • 1 pkg. Pepper jack cheese slices (8 oz.)
Instructions
  1. Brown sausage over medium heat, drain and set aside. Combine corn bread mix and next 5 ingredients in a large bowl. Pour half of batter into greased 12” Dutch Oven. Arrange cheese slices on top of batter and sprinkle with sausage. Spread remaining batter over sausage. Bake 25 - 30 minutes at 400° till done. Serve warm.
