This may be one of the ultimate comfort foods. As I was following one of my favorite blogs, I saw this and thought how it was made for a Dutch oven. It was so good we made it two nights in a row.
Ingredients
4 pounds potatoes, peeled and diced
½ cup sour cream
¼ up butter, softened
¼ cup milk
1 tsp. salt
½ tsp. pepper
1 tsp. chicken bouillon powder
½ tsp. garlic salt
½ tsp. garlic powder
¼ cup grated Parmesan Cheese
1½ cups grated cheddar cheese
12 slices bacon, chopped and cooked
¼ cup green onions
Instructions
On your camp stove, boil the potatoes until tender. Meanwhile, on your other burner, cook the bacon and set aside on a paper towel. Drain potatoes and mash, adding next eight ingredients. Stir in Parmesan and 1 cup cheddar cheese along with half the bacon.
Spoon into a 12" Dutch oven and spread out evenly. Top with the remaining bacon and cheese. Bake at 350 with 8 coals on the bottom and 16 on top for 30 minutes until warmed through and cheese is melted. Sprinkle with green onions and serve.
Note: If you are going camping take the mashed potatoes in a zip-lock bag as well as the other ingredients. Mix everything together on site and bake.
