Loaded Mashed Potatoes

This may be one of the ultimate comfort foods. As I was following one of my favorite blogs, I saw this and thought how it was made for a Dutch oven. It was so good we made it two nights in a row.
Ingredients
  • 4 pounds potatoes, peeled and diced
  • ½ cup sour cream
  • ¼ up butter, softened
  • ¼ cup milk
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. chicken bouillon powder
  • ½ tsp. garlic salt
  • ½ tsp. garlic powder
  • ¼ cup grated Parmesan Cheese
  • 1½ cups grated cheddar cheese
  • 12 slices bacon, chopped and cooked
  • ¼ cup green onions
Instructions
  1. On your camp stove, boil the potatoes until tender. Meanwhile, on your other burner, cook the bacon and set aside on a paper towel. Drain potatoes and mash, adding next eight ingredients. Stir in Parmesan and 1 cup cheddar cheese along with half the bacon.
  2. Spoon into a 12" Dutch oven and spread out evenly. Top with the remaining bacon and cheese. Bake at 350 with 8 coals on the bottom and 16 on top for 30 minutes until warmed through and cheese is melted. Sprinkle with green onions and serve.
  3. Note: If you are going camping take the mashed potatoes in a zip-lock bag as well as the other ingredients. Mix everything together on site and bake.
