Lumberjack Breakfast Sandwiches

I had the opportunity to cut down a 20' pine tree at my daughter's home the other day. We cooked some wonderful breakfast sandwiches to give us the energy to get started. They turned out awesome and were so easy, a real "manly" sandwich. Nothing better than breakfast in the back yard!
Ingredients
  • 8 rolls, Kaiser, Focaccia or the likes
  • 1 lb. kielbasa or smoked sausage
  • Onions, sliced
  • Green Peppers, sliced
  • 8 eggs
  • 8 slices American cheese
Instructions
  1. Preheat a cast iron griddle or fry pan on your camp stove. Cut sausage into 4" lengths, then split down the middle. Fry until heated through and brown on both sides. Meanwhile cook onions and peppers until tender. Fry eggs till over medium, breaking the yolks. Butter the rolls and toast on the griddle. Assemble your sandwich with sausage, onions, peppers, egg and cheese. Be creative with mushrooms, pepper jack or whatever else your heart desires. Have breakfast like a man!
