Baked Pasta with Spinach

Warm baked pasta out of a Dutch oven is great comfort food.  The rich tomato sauce with the warm gooey cheese is hard to beat.  It is also very easy to cook outside because you can take everything with you in a plastic bag or a container.

Baked Pasta with Spinach

1 pound pasta, cooked (I used bow-tie)
2 cups marinara sauce
1 pound Italian sausage, cooked and crumbled
3 cups baby spinach
3/4 cup grated Parmesan cheese
12 oz. fresh Mozzarella cheese, divided

Cook your pasta of choice according to package directions. In a large mixing bowl combine pasta, sauce, cooked sausage, spinach leaves, Parmesan cheese and 4 ounces of the Mozzarella cheese cut into small cubes. Mix well and pour into your 12″ Dutch oven. Slice remaining Mozzarella and lay on top. Bake at 350 with 8 coals on the bottom and 16 on top for 30 – 40 minutes until heated through.

Making garlic toast is so easy.  Gather all your remaining coals, set a lid holder over the top and invert the lid of your Dutch oven.  Slice and butter your French bread and sprinkle with garlic powder.  Grill on your Dutch oven lid.
