Tex Mex Cornbread

Are you looking for a fast and easy meal that will please everybody? Well look no further. This cornbread is warm, filling and has a taco kick of flavor they will love. Make up a batch and see smiles come to their faces.

Tex Mex Cornbread

1 lb. hamburger
1 pkg. taco seasoning
2 pkg. Jiffy cornbread mix.
1 can cream-style corn
12 oz. sour cream
½ C. vegetable oil
3 eggs, slightly beaten
4 – 5 green onions, chopped
1 pkg. pepper jack cheese slices (8 oz.)

Brown hamburger over medium heat, add taco seasoning and prepare according to the directions on the package. Remove from your oven and set aside. (This can be made ahead of time if you are going camping.) Meanwhile, combine cornbread mix and next 5 ingredients in a large bowl.

To assemble, pour half of the batter into clean, greased 12” Dutch Oven. Cover with taco meat and arrange cheese slices on top. Spread remaining batter over the cheese. Bake 25 – 30 minutes at 400° till the cornbread is done and a toothpick comes out clean. Serve warm.
