Leftover Potato Soup

Sometimes after you make a Dutch oven full of flavorful potatoes you seem to have a few leftovers. My family loves potato soup and this one is the easiest thing you will ever make, and the flavor is incredible. It already has the bacon, cheese and spices so the soup is already half made.  It is a wonderful dish for second-day potatoes.

Leftover Potato Soup

4 oz butter
1/4 C flour
1 C chicken broth
1 C milk
salt and pepper
Leftover Dutch oven potatoes, rough chopped

Place a heavy sauce pan on your camp stove over medium heat. Melt butter and add flour to make a roux. Add broth and milk, stir until thickened, season with salt and pepper. Add leftover Dutch oven potatoes, stir and simmer to combine flavors. If the soup is too thick then thin with a little milk. Top with grated cheese if desired.
